Berkeley scallop mousse crab cake on a yellow corn and Surry sausage blintz

Bacon wrapped grilled filet of beef topped with a quail egg and crab meat on an English muffin and draped in white truffle hollandaise

Wild mushroom creamy risotto on fried green tomatoes.

White asparagus veloute with duck ragout

Mosaic of fruits with sweet saffron cream and pink grapefruit vinaigrette on Mache

Wilted spinach salad with orange filet and diced fried plantains with a warm honey bacon dressing

Three cheese and chervil quiche served with fresh fruit

Maple chicken and langoustine~ this is an old recipe from a friend in Alabama,
Granny Smith apple cauliflower puree and a cider glaze

Veal Ravioli~ poached in its own bouillon dotted with foie gras,
mushroom and cream

Beef Tenderloin~ premium fried oysters and baby spinach
topped with béarnaise sauce

Crispy Sea Bass~ with tempura green beans and slate potatoes
finished with sweet and sour jus

Desserts

White chocolate tapioca pudding

Rich Valronah chocolate cake rolled in chocolate espresso beans and served with espresso gelato
